Ingredients

  • 1 cup buttermilk
  • 1 unit egg, slightly beaten
  • 3 cups all-purpose flour
  • 1 cup cake flour
  • ½ cup granulated sugar
  • 1 teaspoon baking soda
  • teaspoons baking powder
  • 1 teaspoon salt
  • 5 tablespoons unsalted butter, cold and cubed
  • 1½-2 cups raisins
  • ½ cup sour cream

Instructions

  1. Preheat the oven to 425°F and line a sheet pan with baking paper.
  2. Whisk the buttermilk and egg together in a small bowl and set aside.
  3. In a large bowl, whisk the all-purpose flour, cake flour, granulated sugar, baking soda, baking powder, and salt.
  4. Rub the cubed butter into the flour mixture until it becomes coarse.
  5. Fold in the raisins with a wooden spoon or spatula.
  6. Make a well in the center of the dry ingredients and pour in the buttermilk mixture, mixing gently.
  7. Fold in the sour cream until the dough is too stiff to stir.
  8. Sprinkle flour on your working surface and on your hands, then shape the dough into a ball.
  9. Divide the dough into two smaller pieces and knead for about 30 seconds until moistened.
  10. Transfer the dough to the lined baking sheet and cut a 1/3-inch deep X on top.
  11. Bake for about 45 minutes or until golden brown and cooked through.
  12. Allow the bread to cool for 10 minutes before transferring it to a wire rack.
