Irish Soda Bread

Instructions
- Preheat the oven to 425°F and line a sheet pan with baking paper.
- Whisk the buttermilk and egg together in a small bowl and set aside.
- In a large bowl, whisk the all-purpose flour, cake flour, granulated sugar, baking soda, baking powder, and salt.
- Rub the cubed butter into the flour mixture until it becomes coarse.
- Fold in the raisins with a wooden spoon or spatula.
- Make a well in the center of the dry ingredients and pour in the buttermilk mixture, mixing gently.
- Fold in the sour cream until the dough is too stiff to stir.
- Sprinkle flour on your working surface and on your hands, then shape the dough into a ball.
- Divide the dough into two smaller pieces and knead for about 30 seconds until moistened.
- Transfer the dough to the lined baking sheet and cut a 1/3-inch deep X on top.
- Bake for about 45 minutes or until golden brown and cooked through.
- Allow the bread to cool for 10 minutes before transferring it to a wire rack.
