Irish Soda Bread

Ingredients

  • 4 cup all-purpose flour
  • 4 tablespoons granulated sugar
  • 1 teaspoon baking soda
  • teaspoons salt
  • 4 tablespoons butter
  • cup buttermilk
  • 1 large egg
  • 1 cup dried currants
  • 1 teaspoon orange zest

Instructions

  1. Preheat the oven to 375°F and line a sheet pan with parchment paper.
  2. In a large bowl, combine flour, sugar, baking soda, and salt.
  3. Add the cold butter and mix until incorporated.
  4. In a separate bowl, whisk together buttermilk, egg, and orange zest.
  5. Slowly add the buttermilk mixture to the flour mixture while mixing on low speed.
  6. In a small bowl, toss currants with 1 tablespoon of flour, then mix into the dough.
  7. Turn the dough onto a floured surface and knead a few times to form a round loaf.
  8. Place the loaf on the prepared baking sheet and cut an X on top.
  9. Bake for 45-55 minutes until a toothpick comes out clean and the loaf sounds hollow when tapped.
  10. Cool on a wire rack and serve warm or at room temperature.
