Super Simple Irish Soda Bread

Ingredients

The bread

  • 4 cups all-purpose flour
  • 2 teaspoons kosher salt
  • 1 tablespoon sugar
  • 1 teaspoon baking soda
  • 1 cup dried currants (optional)
  • 1 large egg
  • cups buttermilk
  • 2 tablespoons melted butter

For finishing

  • to taste room temperature butter
  • as needed tablespoons flour

Instructions

  1. Preheat the oven to 400ºF.
  2. Whisk together the flour, salt, sugar, baking soda, and currants if using.
  3. In a medium bowl, beat the egg and buttermilk, then add the melted butter and stir.
  4. Combine the wet and dry ingredients until mixed; the dough will be sticky.
  5. Grease a skillet with softened butter and shape the dough into a ball.
  6. Transfer the dough to the skillet, sprinkle with flour, and score the top with an X.
  7. Bake for 35 to 40 minutes until golden and hollow sounding when tapped.
  8. Let cool for 15 minutes before slicing.
