Traditional Irish Soda Bread

Ingredients

The dough

  • 4 cups all-purpose flour
  • ¼ cup additional flour for dusting
  • 3 tablespoons granulated sugar
  • 2 teaspoons sea salt
  • 1 teaspoon baking soda
  • 6 tablespoons cold unsalted butter
  • cups cold buttermilk
  • 1 large egg
  • 1 cup raisins (optional)

For greasing

  • ½ tablespoon unsalted butter

Instructions

  1. Preheat the oven to 375°F and grease a cast-iron skillet with butter.
  2. In a large bowl, whisk together flour, sugar, salt, and baking soda.
  3. Cut cold butter into small pieces and mix into the flour until crumbly.
  4. Add raisins to the mixture, breaking up any clumps.
  5. In a separate bowl, whisk together buttermilk and egg.
  6. Make a well in the flour mixture and pour in the buttermilk mixture, mixing until just combined.
  7. Transfer the dough to a floured surface and shape it into a round loaf.
  8. Place the loaf in the skillet and score the top with a deep 'X'.
  9. Bake in the preheated oven for 50-55 minutes until hollow when tapped or reaches an internal temperature of 180°F.
  10. Cool on a wire rack and serve warm.
