Irish Soda Bread

Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- In a food processor, pulse together the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and salt.
- Add the butter and pulse until incorporated but with small pieces still visible.
- In a separate bowl, whisk together the egg, buttermilk, and molasses.
- Combine the dry ingredients with the wet ingredients and stir until a soft dough forms, adding more buttermilk if needed.
- Knead the dough lightly on a floured surface and shape it into a round loaf.
- Transfer the loaf to the baking sheet and cut a shallow 'X' on top.
- Bake for 45 minutes until golden brown and a knife inserted comes out clean.
- Let cool for at least 20 minutes before slicing.
