Ingredients

The bread

  • 2 ¾ cups whole wheat flour
  • 1 cup all purpose flour
  • 1 ¼ teaspoons salt
  • 1 ¼ teaspoons baking soda
  • 2 teaspoons sugar
  • 4 tablespoons cold butter
  • 2 cups buttermilk
  • ¼ cup vegetable oil

For topping

  • 1 tablespoon additional buttermilk
  • 1-2 teaspoons sugar

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet or loaf pan.
  2. Whisk together the whole wheat flour, all-purpose flour, salt, baking soda, and sugar.
  3. Cut the cold butter into the flour mixture until crumb-sized.
  4. Make a well in the center and pour in the buttermilk and vegetable oil, stirring until moistened.
  5. For freeform bread, shape the wet dough into a ball and place it on the baking sheet, cutting a cross on top.
  6. For loaf bread, pour the dough into the prepared loaf pan, filling it about ¾ full.
  7. Bake for 30 minutes at 400°F, then reduce the heat to 375°F and bake for an additional 20-30 minutes until golden brown.
  8. Allow the bread to cool on a wire rack for about 15 minutes before slicing.
