Ingredients

  • 1⅓ cups buttermilk
  • 1 large egg
  • cups all-purpose flour
  • 2 tablespoons cane sugar
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 3 tablespoons cold unsalted butter
  • scant 1 cup dried currants or raisins

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Whisk together the buttermilk and egg in a medium bowl.
  3. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  4. Cut the butter into small cubes and add it to the flour mixture, then work it in until pea-sized.
  5. Stir in the currants.
  6. Make a well in the center of the dry ingredients and pour in the buttermilk mixture, stirring until a shaggy dough forms.
  7. Turn the dough out onto a floured surface and knead to form a ball, adjusting with flour or buttermilk as needed.
  8. Transfer the dough to the baking sheet and score the top with a ½-inch-deep cross.
  9. Bake for 45 to 50 minutes until golden brown and it sounds hollow when tapped.
  10. Cool for 10 minutes on the baking sheet before transferring to a wire rack.
