Grandma's Irish Soda Bread

Ingredients

  • 1 and ¾ cups buttermilk
  • 1 large egg (optional)
  • 4 and ¼ cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 5 tablespoons unsalted butter, cold and cubed
  • 1 cup raisins (optional)

Instructions

  1. Preheat the oven to 400°F (204°C) and prepare your baking pan.
  2. Whisk together the buttermilk and egg in one bowl and the flour, sugar, baking soda, and salt in another.
  3. Cut the cold butter into the flour mixture until it resembles pea-sized crumbs, then stir in the raisins.
  4. Combine the wet and dry ingredients, gently folding until the dough is too stiff to stir.
  5. Transfer the dough to a floured surface and knead briefly until all flour is moistened.
  6. Shape the dough into a ball and score the top with a shallow cut or 'X'.
  7. Bake for 45-55 minutes until golden brown and a thermometer reads 195°F (90°C) in the center.
  8. Let the bread cool for 10 minutes before transferring to a wire rack.
