Ingredients

The dough

  • 1 ¼ cups warm water
  • 2 teaspoons active dry yeast
  • 1 tablespoon runny honey
  • 1 cup unbleached all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 1 ½ teaspoons fine grain sea salt

For brushing

  • 2 tablespoons butter, melted

Instructions

  1. Dissolve the yeast in warm water and stir in honey, then let it sit until it blooms.
  2. In a separate bowl, mix the flours, oats, and salt together.
  3. Combine the wet and dry mixtures and stir well.
  4. Brush a loaf pan with melted butter, then pour in the dough and cover it.
  5. Let the dough rise in a warm place for 30 minutes.
  6. Preheat the oven to 350°F (180°C) and bake the bread for 35-40 minutes until golden.
  7. Optionally, broil for a moment to deepen the color, then cool the bread on a rack.
