Ingredients

Dry Ingredients

  • 180 grams bread flour
  • 165 grams whole wheat flour
  • 50 grams rolled oats
  • 44 grams wheat germ
  • 10 grams brown sugar
  • 10 grams Diamond Crystal Kosher Salt
  • 5 grams baking soda

Wet Ingredients

  • 1 unit egg
  • 450 grams buttermilk
  • 28 grams melted butter

Topping

  • to taste unit additional rolled oats

Instructions

  1. Preheat the oven to 400ºF and butter an 8.5×4.5 inch loaf pan.
  2. In a large bowl, whisk together the dry ingredients.
  3. In a medium bowl, whisk together the buttermilk, egg, and melted butter.
  4. Add the wet ingredients to the dry ingredients and mix until you have a wet, sticky batter.
  5. Transfer the batter to the prepared loaf pan and spread it out evenly.
  6. Sprinkle oats over the top to cover.
  7. Bake for 45 to 55 minutes or until a toothpick comes out clean.
  8. Let cool for at least 30 minutes before slicing.
