Whole Grain Irish Soda Bread

Ingredients

  • 3 ¼ cups white whole wheat flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 4 tbs cold butter
  • 1 ¼ cups buttermilk
  • 1 large egg
  • ¼ cup maple syrup
  • ½ cup raisins

Instructions

  1. Preheat the oven to 400°F.
  2. Combine flour, baking soda, and salt in a food processor and mix briefly.
  3. Add cold butter and process until crumb-like texture is achieved.
  4. In a separate bowl, mix buttermilk, egg, and maple syrup.
  5. Add the wet mixture to the food processor and process until a dough forms.
  6. Transfer the dough to a bowl and mix in raisins by hand.
  7. Shape the dough into a ball and place it in a buttered cast iron skillet.
  8. Score the top of the dough with a knife, making an 'x' about ½ inch deep.
  9. Bake for 40 to 45 minutes until browned and a toothpick comes out clean.
  10. Brush with melted butter while cooling.
