Ingredients

The salad

  • ½ small loaf old country bread
  • 2 tbsp avocado oil
  • ¼ tsp salt
  • 2 medium heads romaine lettuce, chopped
  • ½ pound provolone cheese
  • 10 slices pepperoni
  • ½ pound Genoa salami
  • ½ pound ham
  • ½ red onion sliced very thin
  • 1 red pepper sliced thin
  • ½ cup chopped pepperoncini

The dressing

  • ¼ cup mayo
  • ¼ cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 tsp oregano
  • ½ tsp salt
  • ½ tsp pepper
  • pinch red pepper flakes (optional)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Cut the bread into cubes, toss with avocado oil and salt, and bake for 10-15 minutes until golden brown.
  3. Prepare the salad by adding all the lettuce to a bowl.
  4. Chop all meat and cheese into bite-sized pieces.
  5. Assemble the salad by adding lettuce, red onion, red pepper, and pepperoncini, then top with meat and cheese.
  6. While the bread is toasting, whisk together all dressing ingredients.
  7. Add the croutons and dressing to the salad and toss to coat.
