Ingredients

The salad

  • 1 head Romaine Lettuce
  • 1 small Orange Bell Pepper
  • ½ small Red Onion
  • 1 cup Quartered Artichoke Hearts
  • ½ cup Cherry Tomatoes
  • 1 oz. Olli Salumeria Pepperoni Pre-Sliced Salami
  • 1 oz. Olli Salumeria Toscano Pre-Sliced Salami
  • 1 oz. Olli Salumeria Sopressata Pre-Sliced Salami
  • ¼ cup crumbled Feta Cheese
  • ¼ cup chopped Fresh Basil
  • cup Pita Chips

The dressing

  • 3 tbsp. Mayonnaise
  • 1 tbsp. Dijon Mustard
  • 1 tsp. Red Wine Vinegar
  • 1 tbsp. fresh Lemon Juice
  • 1 tsp. Italian Seasoning
  • ¼ tsp. Garlic Powder
  • pinch Salt
  • pinch Cracked Black Pepper

Instructions

  1. Make the dressing by combining all dressing ingredients in a bowl and whisk until smooth.
  2. Cut the romaine lettuce in half lengthwise and set aside.
  3. Prepare the orange bell pepper and red onion for grilling.
  4. Heat a grill pan and grill the romaine until charred, then set aside.
  5. Grill the bell pepper, onion rings, and artichoke hearts until softened.
  6. Chop the grilled vegetables into bite-sized pieces.
  7. In a large bowl, combine half of the dressing with the chopped vegetables and salami.
  8. Add the remaining dressing, feta, basil, and some pita chips, then toss again.
  9. Serve topped with additional pita chips.
