Ingredients

The chia pudding

  • 2 tablespoons chia seeds
  • 1 tablespoon raw cacao powder
  • ½ cup Silk Soymilk
  • 2-3 tablespoons Silk Soymilk (additional)
  • to taste sweetener (optional)

The toppings

  • 1 tablespoon peanut butter
  • 1 small banana (sliced)
  • to taste cacao nibs (for garnish, optional)

Instructions

  1. Combine chia seeds and cacao powder in a small container.
  2. Add ½ cup of soymilk and stir well. If using unsweetened soymilk, add sweetener to taste.
  3. Let the mixture sit for about 10 minutes, then stir again and refrigerate for at least 2 hours.
  4. In a small bowl, whisk together peanut butter and 2 tablespoons of soymilk. Add more soymilk if the mixture is too thick.
  5. Layer the chia pudding, peanut butter sauce, and banana slices in a serving dish or jar.
  6. Top with cacao nibs if desired and serve immediately.
