Ingredients

The porridge

  • 1 cup raw buckwheat groats
  • 1 medium/large banana
  • scant ½ cup almond milk
  • 2 tablespoons raw cacao powder or unsweetened cocoa powder
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon ground cinnamon
  • 1-2 tablespoons liquid sweetener (e.g., maple syrup)
  • a very small pinch sea salt

Suggested toppings

  • to taste chopped fresh strawberries
  • to taste sliced banana
  • to taste chopped toasted hazelnuts
  • to taste cacao nibs or mini chocolate chips
  • to taste flaked or shredded toasted coconut
  • to taste strawberry chia seed jam
  • to taste homemade vegan nutella

Instructions

  1. Soak the buckwheat groats in water overnight or for at least 2 hours, then rinse and drain thoroughly.
  2. Reserve ¼ cup of the soaked buckwheat groats for added texture later.
  3. Blend the remaining ingredients for the porridge in a food processor or blender until combined, leaving some texture if desired.
  4. Adjust the sweetness to taste and stir in the reserved buckwheat groats.
  5. Chill the porridge for a couple of hours or serve immediately.
  6. Layer the porridge in a glass or bowl with your desired toppings.
