Ingredients

Raspberry Chia Seed Jam

  • 1 bag frozen raspberries (300 g/10 oz)
  • 2 tablespoons chia seeds
  • 2 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract (optional)

Chocolate Overnight Oats

  • 1 cup gluten-free rolled oats
  • cup chia seeds
  • 2 to 3 tablespoons pure maple syrup
  • 2 tablespoons unsweetened cocoa powder
  • cups unsweetened almond milk

Toppings

  • to taste Coconut Whipped Cream or So Delicious Coconut Whip
  • to taste fresh or frozen raspberries
  • to taste sliced toasted almonds or hazelnuts

Instructions

  1. Prepare the Raspberry Chia Seed Jam by cooking raspberries, chia seeds, and maple syrup in a pot until the raspberries break down, then cool.
  2. For the Chocolate Overnight Oats, whisk together oats, chia seeds, maple syrup, and cocoa powder in a container, then add almond milk and mix well.
  3. Let the oats sit briefly, then shake or stir again to prevent clumping, and chill in the fridge for a couple of hours or overnight.
  4. Prepare the Coconut Whipped Cream or thaw store-bought coconut whipped cream.
  5. Once the jam and oats are ready, layer them in jars or bowls with coconut whipped cream and desired toppings.
