Ingredients

Overnight Oats

  • 1 cup whole rolled oats
  • 1 cup almond milk
  • a pinch salt
  • a drizzle maple syrup (optional)

Strawberry Rhubarb Chia Jam

  • 2 cups chopped strawberries
  • 1 cup chopped rhubarb
  • ½ teaspoon lemon juice
  • a pinch salt
  • 1½ to 2 tablespoons maple syrup
  • 2 tablespoons chia seeds

For Serving

  • to taste maple syrup
  • to taste granola
  • to taste coconut cream

Instructions

  1. Prepare the jam by simmering strawberries, rhubarb, lemon juice, and salt in a saucepan for 10 minutes.
  2. Remove from heat and stir in maple syrup and chia seeds, then let cool for 20 to 30 minutes.
  3. Transfer the jam to a jar and chill for at least an hour.
  4. Divide the oats into two jars, add almond milk, salt, and maple syrup, then stir and chill overnight.
  5. In the morning, assemble the jars with chia jam and top with granola, maple syrup, and coconut cream if desired.
