Instructions
- Prepare the jam by simmering strawberries, rhubarb, lemon juice, and salt in a saucepan for 10 minutes.
- Remove from heat and stir in maple syrup and chia seeds, then let cool for 20 to 30 minutes.
- Transfer the jam to a jar and chill for at least an hour.
- Divide the oats into two jars, add almond milk, salt, and maple syrup, then stir and chill overnight.
- In the morning, assemble the jars with chia jam and top with granola, maple syrup, and coconut cream if desired.
