Crispy Chickpea Bites

Ingredients

The mixture

  • 1.5 cups cooked chickpeas
  • 2 tbsp chopped red onion
  • 2 large garlic cloves
  • 3-4 tbsp flour
  • ¼ tsp cumin
  • ¼ tsp coriander
  • ¼ tsp chili powder
  • ½ tsp sea salt
  • to taste freshly ground black pepper
  • 2 tbsp extra virgin olive oil

Optional

  • breadcrumbs

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Combine the chickpeas, onion, garlic, flour, spices, oil, and salt in a food processor and blend until smooth.
  3. Form the mixture into 8 small balls or patties using wet hands.
  4. If desired, roll each bite in breadcrumbs.
  5. Bake in the oven for approximately 30-35 minutes until crispy and golden.
  6. Serve in a pita or wrap with hummus, veggies, tahini sauce, or on top of a salad.
