Grilled Romaine Wedge Salad

Ingredients

The salad

  • 1 head romaine lettuce
  • 2 tbsp olive oil
  • cup blue cheese dressing
  • ¼ cup chunky blue cheese crumbles
  • 1 cup cherry tomatoes, halved
  • 2 slices crunchy thick-cut bacon, chopped
  • ¼ cup thinly sliced red onion
  • 2 tbsp finely chopped chives
  • ¼ cup roughly chopped french fried onions
  • pinch flaky sea salt
  • pinch freshly cracked black pepper
  • drizzle finishing olive oil (optional)

For the blue cheese dressing

  • 3 tbsp creamy blue cheese
  • tbsp buttermilk
  • tbsp sour cream
  • 1 tbsp mayonnaise
  • 1 tsp red wine vinegar
  • ¼ tsp hot sauce
  • tsp garlic powder
  • tsp sugar
  • to taste salt and black pepper

Instructions

  1. Wash and dry the romaine lettuce, then slice it in half lengthwise.
  2. Oil the grill grates and preheat the grill to medium-high heat.
  3. Brush oil on both cut sides and back sides of the romaine halves.
  4. Grill the romaine for 2-3 minutes on each side until grill marks form.
  5. Transfer the grilled romaine to a platter.
  6. Divide the blue cheese dressing and toppings between the salads.
  7. Sprinkle with flaky sea salt, black pepper, and drizzle with finishing olive oil if desired.
  8. For the blue cheese dressing, mash the blue cheese with buttermilk and sour cream until combined.
  9. Stir in mayonnaise, red wine vinegar, hot sauce, garlic powder, and sugar, seasoning to taste.
