Tomato, Cucumber and Chickpea Salad

Ingredients

The salad

  • 2 cups grape tomatoes, sliced
  • 2 cups cucumber, diced
  • 1 15 oz can chickpeas, drained and rinsed
  • ½ medium red onion, chopped
  • 1 medium green bell pepper, seeded and chopped
  • ¼ cup fresh parsley, chopped
  • to taste salt and pepper

The dressing

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • ½ teaspoon salt

Instructions

  1. Chop the tomatoes, cucumber, bell pepper, red onion, and parsley, and place them in a large bowl with the chickpeas.
  2. In a small bowl or jar, whisk together the olive oil, red wine vinegar, lemon juice, garlic, cumin, and salt until emulsified.
  3. Pour the dressing over the salad and toss until everything is well coated.
  4. Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
