Ingredients

The salad

  • 1 can chickpeas, rinsed and drained
  • 2 cups cucumber, diced
  • ¼ cup red onion, diced
  • 1 cup cherry tomatoes, quartered
  • 1 cup feta cheese

The dressing

  • 2 tbsp extra virgin olive oil
  • 3 tbsp white wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp honey
  • ¼ tsp salt
  • to taste black pepper

Instructions

  1. Make the dressing by whisking together olive oil, vinegar, lemon juice, honey, salt, and pepper in a small bowl until emulsified.
  2. In a large bowl, combine chickpeas, cucumbers, red onion, cherry tomatoes, and feta cheese.
  3. Pour the dressing over the salad mixture and combine gently.
