Ingredients

The chicken

  • 1½ – 2 lbs. bone-in skin-on chicken thighs
  • to taste salt
  • to taste ground black pepper

The sauce

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ – ¾ cup chicken broth
  • 3 tablespoons brown sugar
  • ½ teaspoon apple cider vinegar
  • 3 dashes cayenne pepper
  • ¼ teaspoon salt

Garnish

  • 1 tablespoon chopped parsley

Instructions

  1. Season the chicken thighs with salt and pepper on both sides.
  2. Turn on the Saute mode on the Instant Pot and heat olive oil.
  3. Sear the chicken thighs skin side down until browned.
  4. Add minced garlic and sauté until light brown.
  5. Add chicken broth, brown sugar, apple cider vinegar, cayenne pepper, and salt.
  6. Cover the pot, select Manual, and set to High pressure for 8 minutes.
  7. Perform a Quick Release when cooking is done.
  8. Remove the lid and switch to Saute mode to reduce the sauce if necessary.
  9. Add chopped parsley and serve immediately.
