Tunisian Tuna Sandwich

Ingredients

The filling

  • 3 Tbsp olive oil
  • 2 cloves garlic, finely chopped
  • ½ small yellow onion, finely chopped
  • ½ small green bell pepper, seeded and finely chopped
  • 1 15-oz can whole tomatoes, drained and crushed by hand
  • 1 leaf bay leaf
  • to taste Kosher salt
  • to taste freshly ground black pepper

The sandwich

  • 4 Portuguese or hero rolls (8 in. each)
  • 2 medium Yukon gold potatoes, boiled until tender, peeled, and thinly sliced
  • 1 medium ripe tomato, thinly sliced
  • 1 small English cucumber, thinly sliced
  • 2 5-oz cans tuna in oil, drained and flaked
  • ½ cup pitted black olives
  • ¼ cup capers, rinsed
  • 4 pepperoncini, stemmed and halved lengthwise
  • ½ cup harissa, or to taste

Instructions

  1. Heat oil in a large skillet over medium-high heat and cook garlic, onion, and pepper until soft and golden.
  2. Add tomatoes and bay leaf to the skillet, cooking until the sauce thickens slightly, then discard the bay leaf and season with salt and pepper.
  3. Split the rolls horizontally, leaving one side intact, and spread the tomato sauce inside.
  4. Layer the potatoes, tomato, cucumber, tuna, olives, capers, and pepperoncini on top of the sauce.
  5. Drizzle with harissa, halve the sandwiches, and serve.
