Tunisian Tuna Sandwich

The sandwich

Portuguese or hero rolls (8 in. each)

Yukon gold potatoes, boiled until tender, peeled, and thinly sliced

ripe tomato, thinly sliced

English cucumber, thinly sliced

tuna in oil, drained and flaked

pitted black olives

capers, rinsed

pepperoncini, stemmed and halved lengthwise

harissa, or to taste
Instructions
- Heat oil in a large skillet over medium-high heat and cook garlic, onion, and pepper until soft and golden.
- Add tomatoes and bay leaf to the skillet, cooking until the sauce thickens slightly, then discard the bay leaf and season with salt and pepper.
- Split the rolls horizontally, leaving one side intact, and spread the tomato sauce inside.
- Layer the potatoes, tomato, cucumber, tuna, olives, capers, and pepperoncini on top of the sauce.
- Drizzle with harissa, halve the sandwiches, and serve.
