Instructions
- Whisk together the flours, baking powder, and salt.
- In a separate bowl, whisk the oil, buttermilk, and egg, then combine with the flour mixture to form a dough.
- Knead the dough on a floured surface for 2 minutes, then wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 375°F.
- In a skillet, heat oil and fry the onions until caramelized, adding water as needed.
- Once caramelized, transfer the onions to a bowl and fry the sweet potato until browned, adding water as necessary.
- Add the spinach in batches to wilt, then combine with the onions and sweet potatoes.
- Mix in the chestnuts, feta, cottage cheese, egg, salt, pepper, and nutmeg.
- Roll out the dough to a 16-inch disc and fit it into a greased skillet, letting excess hang over the edge.
- Mound the filling in the center, fold the pastry over the filling, and brush with egg white, then sprinkle with poppy seeds.
- Bake for about 45 minutes until golden and the filling is steaming, then let it stand for 10-15 minutes before serving.
