Ingredients

Crust

  • 1 cup spelt flour
  • ¾ cup whole wheat flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 4 tbsp extra-virgin olive oil
  • ¾ cup buttermilk
  • 1 unit egg

Filling

  • 2 large onions
  • 1 large sweet potato
  • 450 g spinach
  • 300 g roasted and peeled chestnuts
  • 125 g feta cheese
  • 1 cup 1% cottage cheese
  • 1 unit egg
  • to taste unit freshly grated nutmeg
  • to taste unit salt
  • to taste unit pepper
  • to sprinkle unit poppy seeds

Instructions

  1. Whisk together the flours, baking powder, and salt.
  2. In a separate bowl, whisk the oil, buttermilk, and egg, then combine with the flour mixture to form a dough.
  3. Knead the dough on a floured surface for 2 minutes, then wrap and refrigerate for at least 30 minutes.
  4. Preheat the oven to 375°F.
  5. In a skillet, heat oil and fry the onions until caramelized, adding water as needed.
  6. Once caramelized, transfer the onions to a bowl and fry the sweet potato until browned, adding water as necessary.
  7. Add the spinach in batches to wilt, then combine with the onions and sweet potatoes.
  8. Mix in the chestnuts, feta, cottage cheese, egg, salt, pepper, and nutmeg.
  9. Roll out the dough to a 16-inch disc and fit it into a greased skillet, letting excess hang over the edge.
  10. Mound the filling in the center, fold the pastry over the filling, and brush with egg white, then sprinkle with poppy seeds.
  11. Bake for about 45 minutes until golden and the filling is steaming, then let it stand for 10-15 minutes before serving.
