Strawberry Oatmeal Bake

Instructions
- Preheat the oven to 350°F and lightly grease a 2-quart baking dish.
- Chop the strawberries and reserve ½ cup of sliced strawberries for topping.
- In a large bowl, whisk together the almond milk, mashed banana, egg, melted coconut oil, maple syrup, and vanilla extract.
- Mix the oats, ground flax seed, baking powder, and salt in a separate bowl, then add to the liquid mixture.
- Stir in the chopped strawberries until combined.
- Pour the mixture into the prepared baking dish and place the remaining strawberry slices on top.
- Bake for 35 minutes until the oatmeal is set; a toothpick inserted should come out mostly clean.
- Let stand for about 10 minutes before serving. Serve with additional strawberries, yogurt, or milk if desired.
