Ingredients

Wet Ingredients

  • ¾ cup unsweetened almond milk

Dry Ingredients

  • 2 cups rolled oats
  • ½ cup oat flour

  • 1 cup chopped fresh strawberries
  • 1 cup chopped rhubarb
  • a pinch salt

Instructions

  1. Preheat the oven to 350ºF and prepare a casserole dish with nonstick spray.
  2. Chop rhubarb into bite-sized pieces, mix with honey, and let sit.
  3. Mash the banana in a large bowl, then add the wet ingredients and mix until combined.
  4. Add rolled oats, oat flour, baking powder, strawberries, and salt, and mix well.
  5. Incorporate the rhubarb and honey mixture into the batter.
  6. Transfer the batter to the casserole dish and spread evenly, topping with extra strawberry slices.
  7. Bake for 33-37 minutes until firm.
