Ingredients

The smoothie

  • ¾ cup pumpkin purée
  • ¾ cup full fat canned coconut milk
  • ½ cup cashews
  • ½ cup maple syrup
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • teaspoon sea salt
  • 2 cups ice

Optional toppings

  • vegan whipped cream
  • ice cream

Instructions

  1. Blend all ingredients except the ice until creamy.
  2. Add the ice and blend until smooth.
  3. Serve and enjoy!
