Ingredients

  • 1 unit apple, seeded and chopped
  • 1 unit cucumber, peeled, seeded and chopped
  • 1 cup spinach
  • 1 cup water
  • ½ cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh mint leaves
  • 2 tablespoons honey or maple syrup

Instructions

  1. Rinse the apple, cucumber, and spinach well.
  2. Core and dice the apple, then peel, seed, and chop the cucumber.
  3. Pour the water into a blender and add the Greek yogurt and lemon juice.
  4. Add the diced apple, chopped cucumber, spinach, mint leaves, and sweetener.
  5. Blend until smooth, then taste and adjust sweetness or texture as needed.
