Cashew Coconut Oat Milk

Ingredients

  • ¾ cup raw cashews
  • ½ cup unsweetened coconut flakes
  • ¼ cup rolled oats
  • 1 medium medjool date, pitted
  • 1 pinch sea salt
  • 3 cups filtered water

Instructions

  1. Soak the cashews in very hot water for 30 minutes or in cool water for 6 hours to overnight.
  2. Drain and rinse the cashews, then add them to a high-speed blender with the coconut flakes, rolled oats, date, salt, and filtered water.
  3. Blend on high for 60 seconds, covering the blender to prevent spillage.
  4. Strain the mixture through a nut milk bag or a thin dish towel over a large bowl, squeezing until mostly pulp is left.
  5. The milk is now ready to enjoy or can be refrigerated for up to 4-5 days.
