Chewy Chocolate Covered Pretzel Cookies

Instructions
- Whisk together the flour, baking soda, cornstarch, and salt in a large bowl.
- In a medium bowl, mix the melted butter, brown sugar, and granulated sugar until smooth. Add the egg and egg yolk, then mix in the vanilla extract.
- Combine the wet ingredients with the dry ingredients and mix until a thick dough forms. Fold in the chocolate covered pretzel pieces.
- Cover the dough and chill in the refrigerator for 3 hours or up to 3 days.
- Let the dough soften at room temperature for 10 minutes before baking.
- Preheat the oven to 325°F (163°C) and prepare baking sheets with parchment paper.
- Roll the dough into balls and place them on the baking sheets, sprinkling with sea salt.
- Bake for 12-13 minutes until soft and slightly underbaked. Allow to cool on the baking sheet for 10 minutes before transferring to a wire rack.
