Ingredients

The chili

  • ½ unit onion, diced
  • 1 unit bell pepper, diced
  • 6 cloves garlic, diced
  • 1 lb ground beef
  • 1 lb stew meat (cubed)
  • 1 tbsp chili powder
  • 2 tsp smoked paprika
  • 1 tsp chipotle powder
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 1 tsp liquid smoke
  • 2 cups beef broth

Optional toppings

  • to taste unit diced onions
  • to taste unit diced tomatoes
  • to taste unit avocado
  • to taste unit shredded cheese
  • to taste unit coconut yogurt
  • to taste unit sour cream

Instructions

  1. Prepare onion, bell pepper, and garlic.
  2. In the Instant Pot, combine ground beef and stew meat, breaking the ground beef into small pieces.
  3. Season the meat with chili powder, smoked paprika, chipotle powder, salt, and pepper, then add liquid smoke.
  4. Pour in the beef broth and add onion, bell pepper, and garlic.
  5. Seal the Instant Pot and cook on the 'soup' setting, then quick release the pressure.
  6. Taste and adjust seasoning as needed, then serve with desired toppings.
  7. For the slow cooker, combine all ingredients and cook on low for 8-10 hours or high for 5-6 hours, then serve.
