Keto Chili

Ingredients

The base

  • 2 ½ lb Ground beef
  • 2 15-oz can Diced tomatoes
  • 1 6-oz can Tomato paste
  • 1 4-oz can Green chiles

Aromatics

  • ½ large Onion (diced)
  • 8 cloves Garlic (minced)

Seasonings

  • 2 tbsp Worcestershire sauce
  • ¼ cup Chili powder
  • 2 tbsp Cumin
  • 1 tbsp Dried oregano
  • 2 tsp Sea salt
  • 1 tsp Black pepper
  • 1 medium Bay leaf (optional)

Cooking oil

  • just a bit Olive oil (for sautéing)

Instructions

  1. 1. Sauté the diced onion in olive oil until translucent, then add minced garlic and cook until fragrant.
  2. 2. Add ground beef to the skillet and cook until browned, breaking it apart as it cooks.
  3. 3. Transfer the beef mixture to a slow cooker or leave it in the Instant Pot/Dutch oven.
  4. 4. Add diced tomatoes, tomato paste, green chiles, Worcestershire sauce, chili powder, cumin, oregano, salt, and pepper to the mixture.
  5. 5. If using the Instant Pot, add 1 cup of beef broth. Mix well and place the bay leaf in the center.
  6. 6. For the slow cooker, cook on Low for 6-8 hours or High for 3-4 hours. For the Instant Pot, use the 'Meat/Stew' setting for 35 minutes and allow natural release.
  7. 7. For stovetop, cover and simmer for about 1 hour until flavors develop.
