Ingredients

  • 2 lbs Ground Beef (10% fat or less)
  • 2 tablespoons Olive Oil
  • 1 large White Onion (Diced, approx 1.5 cup)
  • ¾ cup Green Pepper (Seeded and diced, approx 1 cup)
  • 2 tablespoons Tomato Paste
  • 1 can Whole Peeled Roma Tomatoes (28 oz)
  • 1 tablespoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Granulated Garlic
  • 2 teaspoons Dried Oregano
  • 1 teaspoon Cocoa Powder
  • 3 cups Cauliflower Florets
  • 1 teaspoon Kosher Salt

Instructions

  1. Preheat a heavy bottom pot over high heat.
  2. Add olive oil and when it shimmers, add ground beef and brown for 5-7 minutes without adding salt.
  3. Add ½ teaspoon of salt, diced onion, and green pepper, cooking until the onion is translucent.
  4. Stir in tomato paste and canned tomatoes, checking for stray skins and stems.
  5. Add remaining seasonings including the other ½ teaspoon of salt and mix well, bringing to a simmer.
  6. Reduce heat to low, add cauliflower florets, and stir occasionally until cooked through (about 20 minutes).
  7. Serve hot with shredded cheese, sour cream, and sliced green onions.
