Instructions
- Preheat a heavy bottom pot over high heat.
- Add olive oil and when it shimmers, add ground beef and brown for 5-7 minutes without adding salt.
- Add ½ teaspoon of salt, diced onion, and green pepper, cooking until the onion is translucent.
- Stir in tomato paste and canned tomatoes, checking for stray skins and stems.
- Add remaining seasonings including the other ½ teaspoon of salt and mix well, bringing to a simmer.
- Reduce heat to low, add cauliflower florets, and stir occasionally until cooked through (about 20 minutes).
- Serve hot with shredded cheese, sour cream, and sliced green onions.
