Ingredients

The chili

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 2 lbs ground beef (80/20)
  • 3 tablespoons tomato paste
  • 28 oz tomatoes, chopped
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • cups beef stock

The spice mix

  • 2 tablespoons keto taco seasoning
  • ½ teaspoon chili powder (optional)
  • ½ teaspoon salt, to taste
  • ½ teaspoon pepper, to taste

To garnish

  • to taste guacamole
  • to taste sour cream
  • to taste shredded cheese
  • to taste tortilla chips

Instructions

  1. Heat the olive oil in a non-stick pan over medium heat.
  2. Add the chopped onion, sliced bell pepper, and minced garlic, and cook until fragrant.
  3. Increase the heat to high and add the ground beef, breaking it apart as it cooks until mostly browned.
  4. Add the remaining ingredients including the spice mix, reduce to low, cover, and let it simmer for 1½ to 2 hours until thickened.
  5. Serve the chili in bowls and garnish with shredded cheese, sour cream, and guacamole.
