Instructions
- Heat the olive oil in a non-stick pan over medium heat.
- Add the chopped onion, sliced bell pepper, and minced garlic, and cook until fragrant.
- Increase the heat to high and add the ground beef, breaking it apart as it cooks until mostly browned.
- Add the remaining ingredients including the spice mix, reduce to low, cover, and let it simmer for 1½ to 2 hours until thickened.
- Serve the chili in bowls and garnish with shredded cheese, sour cream, and guacamole.
