Ingredients

The flatbreads

  • 6 rounds gluten free flatbread

The salad

  • 4 pieces cucumbers, diced
  • 1 cup tomatoes, halved
  • ½ cup red onion, chopped
  • 3 tablespoons olive oil
  • 3 tablespoons champagne vinegar or red wine vinegar
  • to taste salt and pepper
  • to crumble on top feta cheese

The spread

  • to spread hummus

Instructions

  1. Preheat the oven to 350°F.
  2. Lay the flatbread on a baking sheet and toast in the oven for 4-5 minutes, or use a toaster.
  3. Chop all the vegetables and mix them in a bowl with olive oil and vinegar, seasoning with salt and pepper.
  4. Spread hummus over the flatbreads and top with the salad mix.
  5. Add crumbled feta cheese on top and enjoy.
