Ingredients

The sandwich

  • 4 slices ciabatta bread
  • 8 leaves Romaine lettuce
  • ½ medium cucumber
  • 1 medium tomato
  • 4 slices red onion

The dressing

  • 2 tbsp red wine vinegar
  • 4 tsp extra virgin olive oil
  • 5 tbsp Kalamata olives
  • 4 tbsp crumbled feta
  • to taste coarse salt and fresh ground pepper

Instructions

  1. Whisk together red wine vinegar and olive oil in a small bowl, seasoning with salt and pepper.
  2. Add minced Kalamata olives and red onions to the mixture and set aside.
  3. Spread the olive mixture on 4 slices of ciabatta bread.
  4. Layer the lettuce, cucumber, tomato, and red onion on top; season with salt and pepper.
  5. Top with crumbled feta, close the sandwich, and cut in half.
