Instructions
- Whisk together red wine vinegar and olive oil in a small bowl, seasoning with salt and pepper.
- Add minced Kalamata olives and red onions to the mixture and set aside.
- Spread the olive mixture on 4 slices of ciabatta bread.
- Layer the lettuce, cucumber, tomato, and red onion on top; season with salt and pepper.
- Top with crumbled feta, close the sandwich, and cut in half.
