Instructions
- Preheat the oven to 350°F.
- In a large bowl, mix the oat flour, almond flour, baking powder, pumpkin pie spice, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the pumpkin, eggs, almond milk, maple syrup, and vanilla.
- Combine the wet and dry ingredients, mixing until just combined.
- Spray two 6-count donut pans with nonstick spray.
- Transfer the batter to a pastry bag or ziplock bag and pipe it into the donut wells.
- Bake the donuts for 12 to 13 minutes until golden and a toothpick comes out clean.
- Let the donuts cool on a wire rack.
- Melt the coconut oil and mix it with the sugar and cinnamon.
- Brush each donut with coconut oil and coat in the cinnamon-sugar mixture.
