Ingredients

The donuts

  • 1 cup oat flour
  • 1 cup almond flour
  • 2 tsp baking powder
  • 1 tsp pumpkin pie spice
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • ½ cup canned pumpkin
  • 2 large eggs
  • cup almond milk
  • cup maple syrup
  • 1 tsp vanilla extract

The cinnamon-sugar coating

  • 2 Tbsp coconut oil
  • cup organic cane sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, mix the oat flour, almond flour, baking powder, pumpkin pie spice, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the pumpkin, eggs, almond milk, maple syrup, and vanilla.
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. Spray two 6-count donut pans with nonstick spray.
  6. Transfer the batter to a pastry bag or ziplock bag and pipe it into the donut wells.
  7. Bake the donuts for 12 to 13 minutes until golden and a toothpick comes out clean.
  8. Let the donuts cool on a wire rack.
  9. Melt the coconut oil and mix it with the sugar and cinnamon.
  10. Brush each donut with coconut oil and coat in the cinnamon-sugar mixture.
