Ingredients

The donuts

  • ¼ cup coconut flour
  • teaspoon fine sea salt
  • ½ teaspoon baking soda
  • 2 tablespoons pumpkin pie spice
  • 2 large eggs
  • ½ cup pumpkin puree
  • cup honey
  • 1 teaspoon vanilla extract

Optional topping

  • coconut sugar, for dipping

Instructions

  1. Preheat the oven to 350°F and grease a standard donut pan with coconut oil.
  2. In a medium bowl, whisk together the coconut flour, salt, baking soda, and pumpkin pie spice.
  3. Add the eggs, pumpkin puree, honey, and vanilla to the dry ingredients and mix until smooth.
  4. Transfer the batter to a plastic storage bag, cut off the tip, and pipe the batter into each donut well without overfilling.
  5. Bake for about 20 minutes or until golden.
  6. Allow the donuts to cool in the pan for 5 minutes, then transfer to a wire rack.
  7. If desired, dip each warm donut in granulated coconut sugar before serving.
