Ingredients

The donuts

  • cup oil
  • ¾ cup brown sugar
  • 2 large eggs
  • 15 ounce can pumpkin puree
  • 1 teaspoon pure vanilla extract
  • 1 ⅔ cups flour
  • 1 ¾ teaspoons pumpkin pie spice
  • 1 ½ teaspoons baking powder
  • ¾ teaspoon coarse salt

Cinnamon Sugar

  • 2 tablespoons granulated sugar
  • 1 tablespoon cinnamon

Instructions

  1. Preheat the oven to 350°F and coat a 6-cup donut pan with cooking spray.
  2. Beat the oil and brown sugar with a hand mixer until fluffy, then add the eggs one at a time and mix in the pumpkin puree.
  3. Mix in the vanilla extract until fluffy.
  4. Add the flour, pumpkin pie spice, baking powder, and salt, and mix on low until incorporated.
  5. Transfer the batter to a Ziploc bag, snip a corner to create a piping bag, and pipe the batter into the donut pan.
  6. Tap the pan on the counter to distribute the batter evenly.
  7. Bake for 15 minutes until the donuts are set, then repeat for any remaining batter.
  8. Mix the granulated sugar and cinnamon in a bowl, then toss the baked donuts in the mixture to coat.
