Instructions
- Preheat the oven to 350°F and coat a 6-cup donut pan with cooking spray.
- Beat the oil and brown sugar with a hand mixer until fluffy, then add the eggs one at a time and mix in the pumpkin puree.
- Mix in the vanilla extract until fluffy.
- Add the flour, pumpkin pie spice, baking powder, and salt, and mix on low until incorporated.
- Transfer the batter to a Ziploc bag, snip a corner to create a piping bag, and pipe the batter into the donut pan.
- Tap the pan on the counter to distribute the batter evenly.
- Bake for 15 minutes until the donuts are set, then repeat for any remaining batter.
- Mix the granulated sugar and cinnamon in a bowl, then toss the baked donuts in the mixture to coat.
