Turkey Spinach Meatballs

Ingredients

The meatballs

  • 2 pounds ground turkey
  • cup finely diced onion
  • 8 ounces cremini mushrooms, minced
  • 10 ounces frozen spinach, defrosted and strained
  • ½ cup Romano cheese
  • ½ cup panko bread crumbs
  • 1 large egg, beaten
  • 2 large egg whites
  • 1 teaspoon grated nutmeg
  • teaspoons kosher salt
  • 1 teaspoon black pepper

The sauce (optional)

  • 4 cups tomato sauce

Instructions

  1. Preheat the oven to 400ºF and line two baking sheets with parchment paper.
  2. In a large bowl, combine the ground turkey, onion, mushrooms, spinach, Romano cheese, panko breadcrumbs, egg, egg whites, nutmeg, salt, and pepper.
  3. Use your hands to mix the ingredients until well combined.
  4. Scoop a heaping tablespoon of the mixture and roll it into a ball. Wet your hands if the mixture is sticky.
  5. Place the meatballs on the prepared baking sheets and repeat until all the mixture is used.
  6. Bake the meatballs for about 20 minutes or until they reach an internal temperature of 165ºF.
  7. If desired, heat the tomato sauce in a skillet and add the cooked meatballs to simmer for an additional 5-10 minutes before serving.
