Turkey Spinach Meatballs

Instructions
- Preheat the oven to 400ºF and line two baking sheets with parchment paper.
- In a large bowl, combine the ground turkey, onion, mushrooms, spinach, Romano cheese, panko breadcrumbs, egg, egg whites, nutmeg, salt, and pepper.
- Use your hands to mix the ingredients until well combined.
- Scoop a heaping tablespoon of the mixture and roll it into a ball. Wet your hands if the mixture is sticky.
- Place the meatballs on the prepared baking sheets and repeat until all the mixture is used.
- Bake the meatballs for about 20 minutes or until they reach an internal temperature of 165ºF.
- If desired, heat the tomato sauce in a skillet and add the cooked meatballs to simmer for an additional 5-10 minutes before serving.
