Ingredients

The meatballs

  • 1 lb lean ground turkey (93% lean)
  • ½ cup breadcrumbs
  • 1 large egg
  • 4 oz fresh spinach
  • 2 oz feta, crumbled

The seasoning

  • ¼ tsp garlic powder
  • ¼ tsp salt
  • Freshly cracked to taste pepper

The cooking oil

  • 2 Tbsp olive oil, divided

Instructions

  1. Chop the spinach and sauté it in 1 Tbsp of olive oil with a pinch of salt until wilted.
  2. In a large bowl, combine breadcrumbs, garlic powder, salt, and pepper.
  3. Whisk the egg and add it to the breadcrumb mixture along with the ground turkey, sautéed spinach, and crumbled feta. Mix until combined.
  4. Shape the mixture into meatballs, about one heaping tablespoon each, yielding approximately 24 meatballs.
  5. Heat the remaining olive oil in the skillet and cook half of the meatballs until browned and cooked through, about 6-8 minutes total.
  6. Remove the cooked meatballs and repeat with the second batch.
  7. Serve with your favorite sauce, over pasta, rice, or vegetables.
