Chipotle Orange Chicken

Ingredients

The chicken

  • 1 whole chicken (2-3 pounds)

The marinade

  • 3 cloves garlic, pressed
  • 1 tablespoon herbes de provence
  • ¼ cup agave nectar or honey
  • 1 teaspoon celtic sea salt
  • 1 tablespoon chipotle chili powder
  • 1 cup orange juice, freshly squeezed

Instructions

  1. Rinse the chicken and pat it dry with a paper towel.
  2. Place the chicken in a 9 x 13 inch baking dish.
  3. In a small bowl, combine garlic, herbes de provence, agave, salt, and chipotle.
  4. Pour orange juice over the chicken.
  5. Rub the marinade mixture onto the chicken.
  6. Marinate the chicken in the refrigerator for up to 3 hours if time permits.
  7. Bake the chicken at 350°F for 1½ to 2 hours.
  8. Serve the chicken.
