Instructions
- Preheat the oven to 350ºF and spray a casserole dish with nonstick cooking spray.
- Whisk together the eggs, peanut butter, almond milk, maple syrup, cinnamon, vanilla extract, and salt in a medium bowl.
- Slice the loaf of bread into bite-sized squares and place them in the casserole dish.
- Add the sliced banana to the bread and mix them together.
- Pour the egg mixture over the bread and use your hands to ensure the bread is fully submerged.
- Cover the dish with tin foil and bake for 30 minutes, then uncover and bake for an additional 15 to 20 minutes until firm.
