Ingredients

The base

  • 10 large eggs
  • 1/2 cup all-natural peanut butter
  • 2/3 cup unsweetened almond milk
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • a pinch salt

The bread and fruit

  • 1 loaf sliced bread (16 oz.)
  • 1 large banana, sliced

Instructions

  1. Preheat the oven to 350ºF and spray a casserole dish with nonstick cooking spray.
  2. Whisk together the eggs, peanut butter, almond milk, maple syrup, cinnamon, vanilla extract, and salt in a medium bowl.
  3. Slice the loaf of bread into bite-sized squares and place them in the casserole dish.
  4. Add the sliced banana to the bread and mix them together.
  5. Pour the egg mixture over the bread and use your hands to ensure the bread is fully submerged.
  6. Cover the dish with tin foil and bake for 30 minutes, then uncover and bake for an additional 15 to 20 minutes until firm.
  7. Let it cool for about 10 minutes before slicing into pieces and serving.
