Ingredients

Wet Ingredients

  • 1 large banana, mashed
  • 2 large eggs
  • 1 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • ¼ cup all-natural peanut butter
  • 2 tablespoons melted coconut oil

Dry Ingredients

  • cups white whole wheat flour
  • 2 teaspoons baking powder
  • teaspoon salt
  • 2 tablespoons coconut sugar or brown sugar

Instructions

  1. Mash the banana in a large bowl until there are few lumps.
  2. Add eggs, almond milk, vanilla, and peanut butter and whisk until combined.
  3. Mix in flour, baking powder, salt, and coconut sugar until combined.
  4. Add melted coconut oil and mix again.
  5. Heat a large nonstick skillet over medium heat and spray with cooking spray.
  6. Use a ⅓ cup measuring cup to scoop batter onto the skillet.
  7. Cook pancakes for about 2-3 minutes until bubbles form, then flip and cook for another 2-3 minutes.
  8. Repeat until all batter is used.
