Peanut Butter Banana Pancakes

Instructions
- Mash the banana in a large bowl until there are few lumps.
- Add eggs, almond milk, vanilla, and peanut butter and whisk until combined.
- Mix in flour, baking powder, salt, and coconut sugar until combined.
- Add melted coconut oil and mix again.
- Heat a large nonstick skillet over medium heat and spray with cooking spray.
- Use a ⅓ cup measuring cup to scoop batter onto the skillet.
- Cook pancakes for about 2-3 minutes until bubbles form, then flip and cook for another 2-3 minutes.
- Repeat until all batter is used.
