Peanut Butter Banana Pancakes

Ingredients

  • cup quick oats or rolled oats
  • 2 pieces over ripe bananas
  • 1 medium egg
  • tsp Lakanto Golden or Classic Sweetener
  • ½ - ¾ cup almond milk
  • 1 tsp vanilla extract
  • ¼ cup peanut butter
  • 2 tsp baking powder
  • tsp salt
  • as needed oil for cooking

Instructions

  1. Blend all ingredients until smooth and set the batter aside.
  2. Preheat a skillet on medium heat and lightly grease it.
  3. Ladle the batter onto the skillet and cook for 3 minutes on each side.
  4. Flip the pancakes and cook for another 2-3 minutes.
  5. Repeat with the remaining batter and serve with butter, bananas, and peanut butter.
