Easy Mexican Instant Pot Black Beans

Ingredients

The beans

  • 1 lb. dry black beans

The aromatics

  • 1 tablespoon grape seed oil
  • 1 cup diced yellow onion
  • 3 cloves garlic
  • 1/3 cup fresh cilantro
  • 1 medium red pepper

The spices

  • 1 ½ tablespoons ground cumin
  • 1 teaspoon ancho chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt

The liquids

  • 4 cups water
  • ½ cup salsa verde
  • 1 medium lime

Instructions

  1. Set the Instant Pot to Saute mode.
  2. Add grape seed oil and onions, and saute until onions are translucent.
  3. Add garlic and saute until fragrant.
  4. Add fresh cilantro and red pepper, and saute for 2 minutes.
  5. Add the dry black beans and spices, and stir for 1 minute.
  6. Pour in the water and salsa verde.
  7. Cancel Saute mode and set to Pressure Cooker mode.
  8. Cover and cook on HIGH pressure for 45 minutes.
  9. Do a natural release, then stir in lime juice and adjust salt if needed.
