Slow Cooker Buffalo Chicken Meatballs

Ingredients

The meatballs

  • 1 lb ground chicken breast
  • 1 medium carrot, chopped finely
  • 1 medium stalk of celery, chopped finely
  • ½ cup plain dried breadcrumbs
  • 2 large eggs
  • 2 tablespoons skim milk
  • 1 teaspoon garlic powder
  • cup crumbled blue cheese

The sauce

  • 12 oz bottle of Buffalo wing sauce

Instructions

  1. Mix all ingredients except wing sauce in a large bowl until combined.
  2. Form the mixture into 12 equal-sized balls.
  3. Brown the meatballs on all sides in a stovetop-safe pot, then transfer to a slow cooker.
  4. Pour the wing sauce over the meatballs and stir to coat.
  5. Cook in the slow cooker on low for 7-8 hours.
