Ingredients

The meatballs

  • 1 lb ground chicken
  • ½ cup diced celery
  • 2 pieces green onions, thinly sliced
  • 1 clove garlic, minced
  • 1 piece carrot, grated
  • 1 teaspoon smoked paprika
  • ¼ teaspoon salt
  • teaspoon ground black pepper
  • 1 piece egg
  • ½ cup gluten free panko

The sauce

  • ¾ cup buffalo sauce
  • ¼ cup ranch dressing

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, combine ground chicken, celery, green onions, garlic, carrot, smoked paprika, salt, pepper, egg, and panko, mixing until combined.
  3. Form the mixture into 1-inch meatballs and place them on a wire rack lined baking sheet.
  4. Bake the meatballs for 5-7 minutes until lightly browned.
  5. Transfer the meatballs to a crock pot and pour buffalo sauce over them, gently tossing to coat.
  6. Cook on LOW for 2 hours.
  7. Serve with a drizzle of ranch dressing.
