Instructions
- 1. Position the oven rack to the highest level and preheat the oven to low broil.
- 2. Remove the outer leaves from the romaine and select 8-10 inner leaves, wash and dry them.
- 3. Toss the romaine leaves with olive oil, salt, and pepper, then arrange them in a single layer on a baking sheet.
- 4. In a small bowl, combine the mustard, vinegar, mayonnaise, lemon juice, garlic, salt, and pepper, and whisk to combine.
- 5. Slowly stream in the olive oil while whisking to emulsify the dressing, then add chopped rosemary and adjust seasonings to taste.
- 6. Place the romaine under the broiler for 1-2 minutes, watching closely, then flip and broil for another 1-2 minutes until wilted.
- 7. Remove from the oven, divide the romaine onto serving plates, and top with dressing and shaved Parmesan.
