Broiled Romaine Salad with Rosemary Caesar Dressing

Ingredients

The salad

  • 1 small head romaine lettuce
  • ½ Tbsp olive oil
  • ¼ tsp salt
  • ¼ cup fresh shaved Parmesan cheese

The dressing

  • 1 Tbsp spicy mustard
  • 1 Tbsp white vinegar
  • 2 Tbsp light mayonnaise
  • 1 Tbsp lemon juice
  • 6 cloves garlic (pressed or grated)
  • 1 pinch salt
  • 1 pinch pepper
  • ¼-⅓ cup olive oil
  • 1 Tbsp fresh rosemary (chopped)

Instructions

  1. 1. Position the oven rack to the highest level and preheat the oven to low broil.
  2. 2. Remove the outer leaves from the romaine and select 8-10 inner leaves, wash and dry them.
  3. 3. Toss the romaine leaves with olive oil, salt, and pepper, then arrange them in a single layer on a baking sheet.
  4. 4. In a small bowl, combine the mustard, vinegar, mayonnaise, lemon juice, garlic, salt, and pepper, and whisk to combine.
  5. 5. Slowly stream in the olive oil while whisking to emulsify the dressing, then add chopped rosemary and adjust seasonings to taste.
  6. 6. Place the romaine under the broiler for 1-2 minutes, watching closely, then flip and broil for another 1-2 minutes until wilted.
  7. 7. Remove from the oven, divide the romaine onto serving plates, and top with dressing and shaved Parmesan.
