Easy Healthy Instant Pot BBQ Chicken

Ingredients

The chicken

  • 2 lbs chicken thighs (or breasts)

The BBQ sauce

  • 1 cup beef broth
  • ½ cup tomato paste
  • ¼ cup balsamic vinegar
  • 1 tbsp chili powder
  • 2 tbsp mustard
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp cumin
  • 1 tsp chipotle powder

Instructions

  1. Whisk together all BBQ sauce ingredients in a bowl.
  2. Refrigerate half of the sauce for later use.
  3. Pour the other half of the sauce into the Instant Pot and add the chicken on top.
  4. Set the Instant Pot to cook for 20 minutes at high pressure.
  5. Allow the pressure to naturally release for 15 minutes, then release any remaining pressure.
  6. Shred the chicken in the pot and mix with the juices.
  7. Serve topped with the reserved BBQ sauce.
